Black Sesame Seeds Bread

Love the smell of fresh bread so I decided to make this for the family. The roasted black sesame had the house smelling so good and full.

How to make Roasted Black Sesame Seeds?

Simply add the black sesame seeds into a pan with medium low fire and roasted for 2-3 minutes. Make sure to toss or stir occasionally so it does not burn.

Prepare to ground the black sesame seeds
Combine grounded sesame and sugar

In a mixing bowl, sift together flour, sugar and salt. Make a well in the middle, add in the egg yolks, butter and yeast solutions. Mix until it is cooperated. Pour the dough out onto a mat and knead

Place the bread dough in a bowl, and cover with a wet towel/saran plastic. Set to the side to proof until the volume is about doubled.Once the bread has finished proofing, punch down the dough to remove the air bubbles. Then transfer the bread to a lightly floured work surface. Knead the dough for 2-5 minutes then divided into 12 pieces.

Shape the bread. Roll each bread dough pieces into 3x5inch long. Brush with melted butter, spread 1 tablespoon of black sesame seeds sugar mixture to half the dough, length wise. Fold the other half of the dough within and pinch the edges so the filling doesn’t leak. Make 2 slits, lengthwise, grab each sides then gently twirl couple of times, then to connect the two ends to create a spiral. Place the shaped bread into the pan. Repeat the same with the remaining bread pieces.

Cover the pan with a wet towel/saran plastic. Let the dough proof until the dough double it’s size (about an hour in a warm kitchen).

Ingredients

  • 1 packet of active dry yeast (7grams or 2 1/4 tsp)
  • 1 tsp sugar
  • 1/2 cup lukewarm milk
  • 3 cups all purpose flour
  • 1 tsp salt
  • 2 egg yolk
  • 3 tbsp unsalted butter, softened
  • 𝗕𝗹𝗮𝗰𝗸 𝗦𝗲𝘀𝗮𝗺𝗲 𝗳𝗶𝗹𝗹𝗶𝗻𝗴:

  • 3 tbsp unsalted butter melted
  • 6 tbsp black sesame seeds, toasted and ground
  • 6 tbsp sugar
  • 𝗘𝗴𝗴 𝗪𝗮𝘀𝗵:

  • 1 egg yolk
  • 2 tsp water
  • black sesame seeds for decoration (optional)

Directions

  1. In a bowl, mix together active dry yeast, sugar and lukewarm milk. Set aside to bloom or foamy. (about 10 minutes)

  3. Place the bread dough in a bowl, and cover with a wet towel/saran plastic. Set to the side to proof until the volume is about doubled. (about 1 hour in or so in a warm kitchen)
  4. While we wait, grease the cake pan. In a bowl, mix the grounded sesame seeds and sugar, set to the side.
  5. Once the bread has finished proofing, punch down the dough to remove the air bubbles. Then transfer the bread to a lightly floured work surface. Knead the dough for 2-5 minutes then divided into 12 pieces.
  6. Shape the bread. Roll each bread dough pieces into 3x5inch long. Brush with melted butter, spread 1 tablespoon of black sesame seeds sugar mixture to half the dough, length wise.   8. Preheat the oven to 350F. Mix the egg yolk and water for the egg wash. Use the egg wash and brush the top of the bread. If wish, can sprinkle some black sesame seeds on top for decoration.
  9. Bake the bread for 20-25 minutes.
