Breakfast Tacos

If there is breakfast burrito, why can’t there also be a breakfast taco? I decided to celebrate my taco Tuesdays with breakfast tacos! Using Mission Food’s mini flour tortillas was the best. It absorbs the flavor and keeps it within it’s tortilla wrap. To make it tastier, I diced up some chicken sausage into the dish for some sweetness. To spice it up, add some diced jalapeno!

Here’ s what you will need:

  • Mission Food’s flour tortillas.
  • Chicken Sausage
  • Eggs
  • Mushrooms
  • Onion
  • Shredded Cheese (your choice)
  • Cooking oil

Start off with heating each side of the tortillas on a pan (1-2 minutes on each side). Remove from heat and set it to the side.
On medium high heat (same pan) add in oil and onion. Stir fry until the onions are transparent.
Add in the sausage and mushrooms and stir fry until there is no more liquid in the mushrooms. Remove from the pan and set to the side.

Using the same pan, on medium heat, add in the remaining of the oil then pour in the egg mixture. Let it sit for at least 1-2 minutes, lower the heat to your lowest then sprinkle your cheese and let it melt. Flip the egg half way inwards then turn off the heat completed. This will help the cheese and egg to combine very well together. Remove the egg from the pan and set to the side.

Ingredients

  • 3 eggs, beaten
  • 1 cup of mushrooms, diced
  • 1/2 onion, diced
  • shredded cheese of your choice

  6. Tortilla on the plate. Add a piece of the cheesy egg, top it off with the cooked sausage, onions and mushrooms.
  7. Shower the breakfast taco with more cheese if desired.
