Chicken Sausage w/ Egg white + Cheese

I guess you can call this a scrambled omelet. I personally do not like eating omelets, but if it’s just scrambled eggs, I am all in for it. The chicken sausages are from Sabatino, and I got them from Costco. Easy to cook since they were pre-cooked. Instead of using olive oil, I used bacon oil. It may not sound healthy eating bacon fat, but using a small about of the oil / residue gives the dish this extra flavor.

Recipe – Chicken Sausage w/ Egg white + Cheese

Ingredients

  • 1 chicken sausage link , chopped (Sabatino’s paleo sausage)
  • 1 bacon slice, sliced
  • 1 swiss cheese slice, diced
  • 1 egg + 1 egg white
  • 1/2 teaspoon pepper

Directions

  1. In a bowl, whisk egg and pepper. Set to the side.
  2. In a small pan, stir fry bacon slices until cooked and crispy. Remove the bacon slices onto a paper towel and remove excessive oil from the pan. Add in the chopped sausages. Stir fry until golden brown. Add in the eggs. Cook the eggs for 1 minute then add in the diced cheese, cook until cheese starts to melt.
  3. Turn off the heat, plate and top with it off with bacon.
