Cranberry Bliss Bars (Starbucks copycat)

Best Christmas treats to be gifted.

One of my all time favorite treats for the holidays! Waking up to a cup of joe and having a piece of cranberry bliss under the Christmas tree.

Ingredients

    𝗕𝗮𝗿 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 12 tbsp unsalted butter
  • 1 1/2 cup brown sugar
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 1 tsp orange zest
  • 1 cup dried cranberries
  • 1 cup white chocolate
  • 𝗙𝗿𝗼𝘀𝘁𝗶𝗻𝗴 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:

  • 1 1/3 cup white chocolate, melted
  • 8 oz cream cheese, soften
  • 1 1/2 confectioners sugar
  • 1 tsp vanilla extract
  • 1 tbsp orange juice
  • 1 tsp orange zest
  • 𝗧𝗼𝗽𝗽𝗶𝗻𝗴 𝗶𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:

  • 1/2 cup dried cranberries
  • 2/3 cup white chocolate, melted

Directions

    𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 𝗳𝗼𝗿 𝘁𝗵𝗲 𝗕𝗮𝗿𝘀:
  1. Heat oven at 350F.
  2. Line a 9 by 13 inch non-stick pan with parchment paper.
  3. Brown the butter. In a small sauce pan, melt the butter and stir on medium heat as it will start to foam and bubble. Brush the bubbles so you could see it turn golden brown then turn off the heat and transfer to a bowl to cool.
  4. 4.Combine flour, baking powder and salt in a medium bowl. 5.Combine the cool butter and brown sugar until well combined. Add in eggs, vanilla extract and orange zest and mix well.
  5. Using a rubber spatula, fold in the dry ingredients into the egg mixture. Do not over mix. Fold in the cranberries and white chocolate. Transfer the batter onto the non stick pan and smooth the top with the spatula.
  6. Bake for 22-25 minutes or until the top is golden brown. Do not over bake. Let it cool over a cooling rack.
  7. 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 𝗳𝗼𝗿 𝗙𝗿𝗼𝘀𝘁𝗶𝗻𝗴 :

  8. Combine the frosting ingredients in a medium bowl until it is fluffy.
  9. Spread the frosting over the cooled bar.
  10. 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 𝗳𝗼𝗿 𝗧𝗼𝗽𝗽𝗶𝗻𝗴𝘀:

  11. Roughly chop the cranberries if desired. Sprinkles the cranberries over the frosting.
  12. Drizzle the melted white chocolate after.
  13. Cut them into triangle and enjoy!
