Kale Enoki Sausage Soup

I love soup. Anything with soup, I will eat it within minutes because I feel like it only taste good when it’s hot. Enoki mushrooms gives the soup this chewy texture which makes the soup more interesting to eat. When there’s vegetable soup, I feel like after a few reheating, the vegetables turn super soft and mushy. If I were cook the enoki mushrooms , the texture stays the same.

Recipe - Kale Enoki Sausage Soup

  • 1 cup kale
  • 1/3 cup sausage meat
  • 1 clove garlic, diced
  • 1 bag enoki mushroom
  • 1 tablespoon olive oil
  • 1 1/2 cup water
  • salt & pepper to taste


  1. In a pot on medium-hi heat, add in oil and garlic. Fry the garlic until it is golden brown. Add in the sausage meat and cook until slightly brown.
  2. At this point, the meat is probably stuck on the bottom of the pan, this is when you add in the water. Scrape the bottom and bring the soup to a boil. Then add in the kale, enoki mushrooms, salt and pepper to taste.
Note: Can substitute chicken broth instead of water for more flavor.
