
I love soup. Anything with soup, I will eat it within minutes because I feel like it only taste good when it’s hot. Enoki mushrooms gives the soup this chewy texture which makes the soup more interesting to eat. When there’s vegetable soup, I feel like after a few reheating, the vegetables turn super soft and mushy. If I were cook the enoki mushrooms , the texture stays the same.

Recipe - Kale Enoki Sausage Soup
Ingredients
- 1 cup kale
- 1/3 cup sausage meat
- 1 clove garlic, diced
- 1 bag enoki mushroom
- 1 tablespoon olive oil
- 1 1/2 cup water
- salt & pepper to taste
Directions
- In a pot on medium-hi heat, add in oil and garlic. Fry the garlic until it is golden brown. Add in the sausage meat and cook until slightly brown.
- At this point, the meat is probably stuck on the bottom of the pan, this is when you add in the water. Scrape the bottom and bring the soup to a boil. Then add in the kale, enoki mushrooms, salt and pepper to taste.
Note: Can substitute chicken broth instead of water for more flavor.
