Kale Sausage Soup

This soup reminds me of chicken noodle soup, but instead of using chicken, I ended up using my left over breakfast sausage links. I am not a fan of cooking the sausage casing in soup, so I had removed it. I did not have any small pasta to work with, so I played around with the rigatonis . Cooked them as the package instructed then cut them into smaller pieces.

Recipe -Kale Sausage Soup

Ingredients

  • 3 cups chopped kale
  • 6 links sausage (removed from skin)
  • 1 1/2 cup button mushroom sliced
  • 1 can chicken broth
  • 1 1/2 cup of water
  • 1 tablespoon oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions


1. Heat up a pan over medium high. Add in oil and sausage.
2. Break the sausages into small bits as you cook. Once the sausages are no longer pink, add in the kale and stir fry 2-3 minutes.
3. Pour in chicken broth and water and bring it to a boil.
4. When the broth bubbles rapidly, add in the mushroom, salt and pepper to taste.
