Kimchi Dumplings

Our family tradition when it comes to Lantern Festival, we like to fold dumplings together. I thought I would continue the family tradition. We usually use pork instead of chicken, however, I wanted to change some ingredients and add in some spicy vegetables, which was kimchi. It gave it a nice kick of spice and right saltiness.

  • 1 lb grounded chicken
  • 2 cloves garlic, minced
  • 2 slices of ginger, minced
  • 1 cup Kimchi, chopped
  • 1/3 cabbage, chopped
  • 1 cup chives, chopped
  • 3 shitake mushrooms, chopped
  • 1 1/2 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 pack dumpling wraps

  1. Chop and minced all the ingredients. Combine all ingredients together and mix well. After mixing, it should form into a paste.
  2. Unwrap the dumpling wraps, and prepare to wrap! (see above on how to easily wrap dumplings)
Note: If unable to finish all the dumplings at once, can prepare parchment paper with a plate so you can freeze the dumplings and pack them into a ziploc bag.
