
This noodle dish is one of my favorite refreshing cold noodle dish. If you do not want the spicy or experience the numbness, you can leave out the pepper corn and chili oil.
You will need:

Recipe - Sichuan Sesame Cold Noodles
Ingredients
- 8 oz dry noodles
- 1/2 lb grounded pork
- 1 clove garlic, minced
- 2 tbsp cooking wine
- salt and pepper
- 1/2 carrot, shredded
- 1 stalk green onion
- 1 cucumber, sliced into stripes
- 1/3 cup Roasted Sesame Dressing
- 1/2 tbsp sichuan peppercorn, grounded into powder
- 3 tbsp chili oil
- 2 cloves garlic minced
- 1 tbsp Chinese black vinegar

Directions
- Bring a pot of water to boil. Cook the noodles as instructed on the package. Remove from water, rinse under cold water to stop it from cooking and set to the side.
- In a bowl, add in grounded pork, garlic. cooking wine. salt and pepper. Let it marinate. Meanwhile, prepare the sauce.
- Prepare the sauce. Add the peppercorn into the pestle mortar. Pound until it turns into a powder. Add the powder into a bowl then mix in the ingredients for the sauce and set it to the side.
- In a pan with medium high heat, add in oil and the grounded pork. Cook for 10-15 minutes or until it is cooked. Set it to the side.
- Toss the noodles, cooked ground pork. sauce, cucumber and carrots. Stir to mix well. Ready to be served.
