Recipe - Spicy Lemongrass Sauce
- 1 stalk lemon grass
- 3 tablespoons fish sauce
- 5 tablespoons sugar
- 5 tablespoons hot water
- 1/2 lime (juiced)
- 3 garlic cloves
- 2 tablespoons red chili flakes or red pepper flakes
- 1 tablespoon oil
- Mix sugar and hot water in a bowl until sugar dissolves then set aside.
- Finely chop lemon grass, garlic and red chili flakes and place into a sauce pan over medium high heat with oil. Stir fry until they are golden brown and let it cool.
- After cooling, add in the sugar mixture, lime juice and mix. Taste for any adjustment needed.
Note: great for marinade, dipping sauce and salad dressing.
